We visited, laughed and drank this delicious hot beverage of coffee, Kahlua and pumpkin spice creamer. It was a holiday tradition I loved, and made making 6 or 7 pies so much happier.<p></p><p>She lives in the real world now and we text or FaceTime, but it just isn't the same and I miss her. Well, she just send me this text and picture. Looks like she had her pre-Thanksgiving game on and is already drinking our Wednesday-before-Thanksgiving-pie-making-drink.</p><p>So, I thought I would join her. I'm making the keto(ish) version of our pie-making drink and if she can start early, so can I. This one is a keeper. The DIL loves Hawaiian sweet rolls and I get them every year for Thanksgiving for her. Well, this bread tastes just like that bread, according to Dave. It was -25°F here last week and the old dog had a hard time getting back into the house after his morning run to the dog yard. I'm so glad we have indoor plumbing. Then it warmed up by 40 degrees and dumped snow. We spent the whole weekend moving snow. I didn't get the bathroom painted like I wanted and I didn't get all the Christmas decorations up like I planned, but we moved about a ton of snow, and expect more this week.</p><p>I have started testing some new recipes for our Holiday week when the grandsons and their people come to visit in November. They are coming for the whole week before Thanksgiving and I am taking that week off work to play with those boys. I've got plans for the <a href="http://atasteofalaska.blogspot.com/2019/07/grandmas-naughty-dinosaurs.html" target="_blank">naughty dinosaurs</a>, decorating cookies, making caramel corn and we will have a taffy pull! I'm a little excited.</p><p>One of the recipes I've tested is pumpkin layer cheesecake. It cooks in the Instant Pot, comes together quickly and is so delicious! Mix until it resembles wet sand. </div><div><br /></div><div>Spray a 7" springform pan with cooking spray, line bottom with parchment paper. Press the crust evenly into the pan and work it half way up the side of the pan. Place the pan in the freezer while you mix the cheesecake batter.</div><div><br /></div><div>In a large bowl, using a hand mixer on medium speed (I use my stand mixer), combine the cream cheese and erythritol until light and fluffy, 2-3 minutes. Add eggs caramel syrup, vanilla and pumpkin pie spice. Beat until well combined.</div><div><br /></div><div>Remove 1 cup of cheesecake batter to a small bowl. Mix in the pumpkin puree. </div><div><br /></div><div>Remove the crust from the freezer and pour in the pumpkin cheesecake mix, smoothing the top. Add the rest of the cheesecake over the top, smoothing the top. Cover top with aluminum foil.</div><div><br /></div><div>Add the water to the Instant Pot and lower the trivet into the pot. Carefully place the cheesecake on the trivet in the Instant Pot.</div><div><br /></div><div>Close lid and seal the vent. Cook on high pressure for 45 minutes. Once it is finished, wait 10 minutes then quick release the steam. </div><div><br /></div><div>Remove the trivet and cheesecake from the pot. Remove the foil from the top of the pan and let cool for 30 minutes. Cover with cling wrap and place in refrigerator for at least 8 hours.</div><div><br /></div><div>To serve; remove from refrigerator and let sit at room temp. for 30 minutes. Remove ring of the springform pan, cut and serve. I don't want to hear it, yes Christmas is coming out now. Remove from heat and add vanilla, coconut oil and salt. </p><p>Meanwhile, measure shredded coconut into a large mixing bowl. Pour coconut milk mixture over shredded coconut and mix well. </p><p>Place a sheet of parchment paper on a large cookie sheet. With a small scooper or two teaspoons, make 36 mounds of the coconut mixture. Put one almond on each mound and press to adhere. Refrigerate until firm, at least 30 minutes.</p><p>Once the coconut mounds are firm, melt chocolate chips and coconut oil in a microwave safe bowl in 30 second increments, stirring after each 30 second increment, until the chips are melted and smooth. Alternatively, you can melt the chips and coconut oil over a double boiler. Dip bottom of each mound in chocolate and return to cookie sheet. Mooree is not impressed because I spend too much time cleaning and his afternoon walk turns into a hurried couple of blocks instead of the 30 minutes we were walking, it doesn't help his walk time that it is about 28°F outside. </p><p>Well, one of the things I uncovered is a laundry basket full of old papers, tax returns, expired warranties and old checks from 2015 that I cleaned out of my files during spring cleaning. I told Dave we had to have a fire and burn that stuff, I was ready for it to go, and I wasn't going to shred all that. And we all take a deep breath before the hectic holiday season starts. It is very quiet for me since I am still working from home and I'll have no travel season this fall. I used to drink massive amounts of Diet Coke, but I've been trying to stay away from that stuff. It mixes with the ice and makes this smooth, frothy drink. I've made this with water, coffee, coconut milk, almond milk and coconut water. I love the cold, crisp mornings and how it warms up in the afternoon. I love the smell of cranberries, the foggy mornings, fires in the morning to "take the chill off" and lots of fall baking with warm spices. I love apple pie and pumpkin bread. I love piles of leaves as they fall from the trees and Halloween decorations that pop up all around the neighborhood. <p></p><p>I made pumpkin bread this week for my contribution to Breadline. I just double <a href="http://atasteofalaska.blogspot.com/2020/10/the-quiet-after-moose-camp.html" target="_blank">this recipe</a> and have 4 loaves at a pop. I bake on Wednesday and Thursday mornings before work, so I dropped off 8 loaves this week. </p><p>Well, I love pumpkin bread too, and I decided I needed some this week. I made this pumpkin mug cake for breakfast while I was baking for Breadline. It was a warm and delicious breakfast. It is delicious plain but I like it at breakfast with a dollop of whipped cream. When I make it in the evening for dessert, I like to add a pecan topping or a cream cheese frosting. I've fixed that, I opened a can and spooned out tablespoons and froze them. Moose season ended September 25th for us and on the 26th they broke camp and headed home. Then there was the flurry of all the unpacking, cleaning, drying, organizing and storing until the next moose season.<p></p><p>We were fortunate and got one moose. The meat has all been cleaned and taken to the butcher to be processed and packaged, I love getting it back all wrapped and and ready for the freezer. The freezer has been cleaned out and reorganized so the moose would all fit and freeze before we divided it between the hunters. The last out-of-state hunter was hauled to the airport this morning (at 3:30 am) and they are almost home as I write this. </p><p>My brother was the last to leave(3:30 am, thanks bro). Airlines are not serving food yet and it is a 3 1/2 hour flight from Fairbanks to Seattle where he'll have to change planes. I made him a little breakfast to-go sack with hard boiled eggs, cheddar cheese and homemade pumpkin bread. I still really owe him after he brought up <a href="http://atasteofalaska.blogspot.com/2020/09/new-cabinet-and-tea-set-and-chocolate.html" target="_blank">my grandma's baking cabinet.</a></p><p>This recipe makes two loaves so I sliced half of one loaf for my brother's breakfast, the other half got sliced and sent across the street to the neighbor. The second loaf went to my friend who is dealing with injured family members from an ATV accident. Generously spray 2 (8 1/2 X 4 1/2")loaf pans with cooking spray, set aside.</p><p>In large mixing bowl combine vegetable oil, eggs, sugar, pumpkin puree and vanilla. Mix well. </p><p>In a medium bowl, combine flour, baking soda, baking powder and salt. Add dry ingredients to pumpkin mixture, mixing until well combined. Divide batter evenly between the two prepared loaf pans. Bake for 45-55 minutes, until a toothpick, stuck in the middle of the loaf, comes out with few moist crumbs.</p><p>Cool in pans for 10 minutes, remove from pans and cool completely before cutting. They are stinky, rude, jerks...and I still love them.</p><p>Years ago, when we put hardwood floors in, I bought some nice wool area rugs. Every spring Dave would take them outside and shampoo them to freshen them up. A couple years ago they were smelling a little doggy, so I rolled them up and put them in the garage until Dave could shampoo them. I was surprised how much fresher the house smelled with them gone. I figured it was just time for their spring cleaning. </p><p>Well, Dave shampooed the rugs, let them dry in the sun and put them back in the living room. Immediately the room smelled like wet dog. Dave took the rugs out and shampooed them again, using Oxy clean and special carpet shampoo for animal smells. They dried in the sun, were brought back into the house and they still smelled. So we sent them to a professional carpet cleaner. He shampooed, treated and put in an ozone chamber...and they still smelled. So we threw those expensive wool carpets away. </p><p>I left the floors bare for the summer, but come fall we needed some carpets. I bought some cheap carpets at my friend Fred's store, we used them through the winter and by spring they were used up. So continued the routine of new carpets in the fall, bare floors all summer and fresh (cheap) carpets in the fall again. </p><p>Well, it is fall and the mornings are cold. I've started building a small fire in the mornings, just to take the chill off, and I needed to buy some carpets. They were on sale so I purchased one. That afternoon, I washed the floors and laid the new carpet. I went to my office to put away a book, came back into the living room and the dogs had already chewed the new carpet. Not 5 minutes on the floor and it is already chewed. Place butter in mug and microwave until melted. Add almond flour, beaten egg, Swerve, stevia, baking soda and cinnamon. Mix well, scrape down sides and microwave for 60-90 seconds until center is set. Cool while making topping.</p><p>For topping, mix cream cheese, cinnamon, Swerve and 1 tsp. heavy cream, adding more cream to make desired consistency. He was out at moose camp with my brother, his brother, our oldest boy and two other friends. He left on Friday after work and was spending the week. I was home, holding down the fort and watching the dogs...or the dogs were watching out for me.<p></p><p>When Dave is gone, the dogs are on high alert. They bark at all the falling leaves, the neighbors leaving for work, the same neighbors getting home from work, the mailman and the garbage crew. It is a good thing they protect me from all that, and it works because not one mailman or neighbor leaving for work has murdered me and none of the falling leaves have broken in. I'm so glad those dogs take such good care of me.</p><p>Well, while Dave is gone, the dogs sleep in my room, I don't sleep very easy when I'm in the house alone. Hershey has his little bed next to the baseboard heater and the big dogs each have a bed on either side of our bed. Tek is on Dave's side and Mooree is on my side. I have to climb into bed from the bottom and crawl up to my pillow, but it all works. </p><p>So, we were all settled down in bed after we got the text from Dave that he had made it into camp (I wait up to make sure he makes it so I can call for help if he doesn't) and we were sound asleep. Suddenly both big dogs jump up, run to the top of the stairs and start barking. This, of course, wakes me up. I jump out of bed and then have this dilemma: do I put on sweat pants first or grab my gun first? If I grab my gun and have to shoot an intruder, then I'm stuck there without pants. I'll have to call 911, the paramedics will come, the police will come and when is a good time to put on pants after you shoot someone? But, if I put on pants first and someone comes up the stairs, I'll be putting on my pants mid-leg and won't have my gun or be able to run into the closet to get it. What was I going to do?</p><p>So I grabbed the gun first. Nobody wants to see me without pants on, not even an intruder, but I figured shoot first, get dressed later. </p><p>And the dogs were still barking.</p><p>I finally peeked around the corner and down the stairs and didn't see anything. The dogs did not run down the stairs, just sat at the top barking down. I figured the dogs had been barking long enough that an intruder would have heard them and left. I turned on the hall light, the dogs ran down the stairs, and I followed them, gun in hand. Nothing. I checked that the doors were all locked, the windows all closed, nothing. I let the dogs outside and they took care of business and came back inside calm. We went back to bed. In no time at all the dogs were all asleep, Hershey was snoring, but I was wide awake. There was no way I was going to make it through the morning without some help. I made up a batch of this pumpkin spice cream mix and had a couple pumpkin spice lattes. This make a big batch so I can enjoy it all fall. I like Sukrin Gold</p><p>1/4 cup sugar free maple syrup, I like Choc Zero</p><p style="text-align: left;">1 Tbsp. vanilla extract</p><p>1 Tbsp. pumpkin pie spice</p><p>1 cup heavy cream, room temperature</p><p>In a medium bowl cream together butter, brown sugar substitute, maple syrup substitute, vanilla and pumpkin pie spice. With blender running on low, slowly pour in heavy cream and mix until completely incorporated. Makes about 2 1/2 cups of creamer.</p><p>To make Pumpkin Spice Coffee</p><p>Add 1-2 tbsp. PSL mix to each hot cup of coffee. We were all watching the football game, our oldest son, my brother, my brother in law and we had ordered pizza for dinner. I volunteered to run to pick it up at half time since I was the only one not drinking beer. Little did I know I would be taking my life in my hands. I am really thankful to be home in one piece. Just a minute, I need to refill my<div>glass....<br />
<br />
So, halftime came and I jumped in the truck to go pick up the pizzas. It was a normal trip, I ground a few gears as I shifted, but I am getting much better at shifting this old truck. I ran into the restaurant got the pizzas and was back in the truck in no time. I pulled out of the parking lot and noticed I kind of rolled through the stop sign. I really didn't think much about it, there was no traffic and I stopped, eventually. I drove around the block to get back to the main road and hit a red light. I hate hitting red lights in the truck because you have to come to a complete stop before you can shift down and lots of times the light has already changed and everyone behind you is waiting. <br />
<br />
Well, I hit the brakes and didn't stop.<br />
<br />
At least not until I was dead center in the intersection. Thank goodness I was the first at the intersection and no one was speeding through. I shifted and pulled through, wondering what I had done wrong. I had 4 more stop lights before I made it home and I needed to get this figured out. The next stop light was coming up and it was red. I was driving really slow and I hit the brakes, nothing. I pumped the brakes, nothing. The light turned green and the line in front of me moved before I ever made it to the intersection, and I drove slowly through. The same thing happened at the remaining 3 intersections (someone was sure watching out for me that day) and I made it to my neighborhood shaking but in one piece.<br />
<br />
I was going really slowly, but when I got to our driveway I felt like I was going too fast and we had several extra cars in the driveway, I didn't want to wreck my truck. So, I drove down the street, turned around at the end of the road and headed back. I still felt uncomfortable pulling into the driveway so I pulled in front of my bother in law's truck...and didn't stop until I was sitting in front of the neighbor's driveway, blocking their cars. No problem, I backup up a little. But it was a problem because the truck kept backing up and was getting closer and closer to my brother in law's truck, I just knew I was going to back into it. Again, someone was watching out for me because I stopped just inches from making impact. I grabbed the pizzas and wobbled into the house.<br />

"Why didn't you park in the driveway?" Dave asked when I came through the door.<br />
<br />
I burst into tears and told him the whole story. He went outside to check. One of my brake lines has split and leaked all the brake fluid. By the time I got to the restaurant, all the fluid had leaked out and I had no brakes left.<br />
<br />
So, the truck is parked for the winter. We will worry about brakes in the spring. And after I stopped crying I had a drink. The tea set had been in my family for generations. My grandpa chewed on the dragon horns when he was a baby and chewed some of them off. But then, as an added bonus, he brought my grandma's baking cabinet. I remember this cabinet hanging in my grandma's kitchen. It was above the kitchen table and where my grandma kept her recipes and ingredients for baking. Because I'm the baker in the family, my mom said I could have it when she was ready to let it go. I couldn't believe my brother brought it with him, that the glass didn't break on the airline and I can't believe it fit perfectly between the two kitchen windows, like it was made just for that space. My brother put it up for me and so I owe him something pretty special.</div>

So I made lots of cookies and these were a little extra. These soft peanut butter cookies with a crispy edge paired with creamy peanut butter filling and then, just a bit of chocolate to make it extra special. These are a cookie worthy of my grandma's baking cabinet.</div>

Peanut Butter Sandwich Cookies<br />
<br />
for the cookies:<br />
<br />
1/2 cup butter<br />
1/2 cup shortening<br />
1 cup peanut butter<br />
1 cup granulated sugar<br />
1 cup packed brown sugar<br />
3 eggs<br />
1 tsp. vanilla extract<br />
3 cups flour<br />
2 tsp. baking soda<br />
1/4 tsp. salt<br />
<br />
for the filling:<br />
1/2 cup peanut butter<br />
3 cups confectioner's sugar, sifted to remove lumps<br />
1 tsp. vanilla extract<br />
5-7 Tbsp. milk or cream, depending on consistency desired<br />
<br />
for chocolate dip:<br />
1 pkg. chocolate chips plus 2 tsp. shortening or coconut oil<br />
or chocolate melting chocolate disks.<br />
<br />
for cookies:<br />
Beat butter, shortening, peanut butter and sugars until light and fluffy. Add eggs, one at a time, and vanilla extract, mix well.<br />
In a medium bowl, mix flour baking soda and salt. Add to creamed mixture a spoon at a time until it is all mixed in. Refrigerate for 2-3 hours.<br />
<br />
Preheat oven to 375°F. Line cookie sheets with parchment paper.<br />
<br />
Roll dough into 1" balls, I use my smallest cookie scoop. Make criss-cross pattern on each cookie with a fork. Bake for 6-8 minutes. Cool on cookie sheet for 5 minutes then move to cooling racks.<br />
<br />
Meanwhile make filling:<br />
Mix peanut butter and confectioner's sugar with vanilla extract. Add milk until you reach the desired consistency. Spread or pipe filling on one cookie, firmly press second cookie on filling to make a sandwich. Place cookies in freezer for 15 minutes.<br />
<br />
While cookies are in freezer, melt chocolate. Dip 1/2 of each cookie sandwich into melted chocolate. Let excess drip back into bowl, slightly scraping the bottom cookie to remove extra. Place on cookie sheets until chocolate is firm. Enjoy.<br />

It is Fall in Fairbanks. The leaves are all yellow and falling to the ground, we've had a frost overnight now, and it feels like fall. I have to wear a jacket when I walk the dogs and I wait until the afternoon so it will warm up some. Mooree doesn't like the new schedule, he starts whining about 10:30 when we used to go walk and acts all excited if I go to get a drink of water in the employee kitchen. (He really doesn't get this "work hours" thing).<br />

We did the last of the yard work last week and so we are buttoned up for winter. I'm not too happy about it, but it is what it is.<br />

Well, when it first turns cold I always crave soup. I love soup and Dave doesn't so I make a big batch and eat it for my lunch for the week. I also love chicken pot pie and have been craving it so I made chicken pot pie soup for my lunch this week.<br />

Chicken Pot Pie Soup<br />
<i>I used carrots and corn, veggies I usually stay away from because of the carbs, but I really wanted that old-fashioned chicken pot pie flavor. You can substitute or just leave those out. It will change your total macros.</i><br />
<i><br /></i>
2 Tbsp. butter<br />
1 small onion, diced<br />
1 cup celery, diced<br />
3 cloves garlic, minced<br />
1 cup corn*<br />
1 cup sliced carrots**<br />
2 cups green beans<br />
1 whole chicken, cooked and shredded (I did one in my Instant Pot, but a rotisserie chicken would work)<br />
6 cups chicken stock<br />
1 cup heavy cream<br />
1/2 tsp xanthan gum, optional<br />
<br />
In a large stock pot, melt butter over medium high heat. Add onion, celery and cook 3-5 minutes until onions become translucent. Add garlic and stir for 1 minute until garlic is fragrant. Add corn, carrots, green beans, chicken and chicken stock. Simmer 10 minutes. Add cream and xanthan gum, whisking in the xanthan gum completely. Bring to simmer and serve.<br />

Fall is in the air here. When ever you talk to someone they say, "Boy, it sure feels like Fall." I know fall doesn't officially start for a while, but here in Alaska the trees are turning yellow, the nights are cooler (no frost in Fairbanks yet), and gardens are getting cleaned up and put away for another year. Snow will dust the ground soon, and we will all settle into our winter mode.</div>

I decorated these Fall mini cookies to embrace the season! I mixed a brown sugar and spice cookie dough from <a href="https://www.bakeat350.net/2009/11/brown-sugar-and-spice-cut-out-cookies.html" target="_blank">Bake at 350</a> and added a little pumpkin spice mix to the royal icing. They smelled wonderful, like grandma's fall baking.<br />

There is a giant spider in the employee bathroom. I've been going upstairs to my bedroom to use the bathroom up there since I can't get the janitor to clean that spider away. And, it's a real problem because today is the day <strike>I'm</strike> the janitor is supposed clean the bathrooms, according to the cleaning schedule.<br />
<br />
Well, this morning I forgot a bit about the spider and waited too long to head to the employee bathroom so there wasn't time to go upstairs. And, just as I'm pulling down my pants I see the spider hanging from the night light right behind the toilet. I decided I could be brave, and my old lady bladder wouldn't let me wait anymore, so I went...leaning way forward away from that giant spider, as quickly as I could.<br />

When I was done, I looked at that spider hanging there, it did't move. Is it dead? It had been in the bathroom a while. So, I blew on it. Nothing. I blew on it harder. Still nothing. I decided it must be dead and I could be brave and get a piece of tissue and throw it away. So, I took a deep breath, grabbed a <strike>handful</strike> little piece of tissue and swiped at it.<br />

It dropped down on its web to the floor. I <strike>screeched and jumped back </strike> calmly left the employee bathroom as the spider disappeared behind the toilet. I am never going back in there again.<br />

I needed to calm my nerves, and when I'm anxious I bake. So I headed into the kitchen to make myself this lemon mug cake. I guess using the upstairs bathroom during the work day will help me get my steps in and work off all the mug cakes I've been making and eating.<br />

1 1/2 Tbsp. powdered Swerve, or sweetener of choice</div>

Spray a large microwave safe mug or small bowl with cooking spray. Crack egg into mug and whisk with a fork. Add all the other ingredients and mix well. Cook in microwave for 90 seconds. Cake will rise over double in size and then shrink back down, make sure you use a large enough mug.</div>

When we were with Gman and his people last month, my son made the best brisket I've ever had. He smoked it for something like 14 hours. The meat was tender and juicy, the smoke level was perfect, the bark was delicious and just crusty enough...it was so good. I wanted to try my hand at it so I went and bought a 12 lb. brisket. But after I talked to him, and watched the video he suggested, I realized I couldn't do it because I don't have a smoker, or a grill that would work for this. So, I decided to punt and do it a different way.<br />

I used my oven for the low and slow part 250° for 8 hours, then on the grill, with smoke, for 1 hour; slathering it with sauce every 15-20 minutes to build a bark of sorts.<br />

My brisket was also delicious. We all enjoyed it, but it wasn't the same as my son's. We are going to go visit in December, I hope he will make it for us again.<br />

Oven Brisket<br />
<br />
10-12 lbs. brisket, trimmed<br />
1/2 cup yellow mustard<br />
salt<br />
pepper<br />
garlic powder<br />
1 bottle beer, lager<br />
1 cup apple juice<br />
1 1/2 cups barbecue sauce, <a href="http://atasteofalaska.blogspot.com/2012/07/barbecue-sauce.html" target="_blank">we used this</a><br />

aluminum foil<br />
wood chips or pellets for smoking<br />
<br />
THE NIGHT BEFORE! (I'm not yelling, just don't forget this step.)<br />
Place trimmed brisket in large roasting pan, I used a disposable aluminum pan. Rub 1/2 the yellow mustard on each side and get the edges. Generously sprinkle salt, pepper and garlic powder over all sides of the brisket. Cover with cling wrap and place in fridge overnight.<br />
<br />
Remove brisket from refrigerator about 45 minutes before you want to put it in the oven.<br />
<br />
Preheat oven to 250°F.<br />
<br />
Pour beer and apple juice in pan with brisket, cover tightly with aluminum foil. Place in oven and bake for 6-8 hours, until internal temp. is 165°F. Remove from oven, remove brisket from pan and place of medium-hot grill. Add aluminum foil pouch with wood chips or pellets for smoking, according to manufacturers directions (We used charcoal, and placed the wood chip package on the briquettes to smoke). Smoke for 1 hour, basting with sauce every 15-20 minutes. Remove from grill and let rest 15-20 minutes. Slice against the grain and serve.<br />

The boys are headed out to moose camp. My brother is coming up and he loves cookies. I made him a deal, if he carefully packed my dragon tea set and brought it up to me, I would bake for him. So, every Wednesday, when I bake for the Soup Kitchen, I've been making a double batch and putting 2 dozen unbaked cookie balls in the freezer. When he shows up with the tea set I'll bake those cookies and send him into moose camp with a bounty!<br />
<br />
Now, word has got out about the cookies for Cal. The other hunters really like sweets, and have been giving me a hard time about baking for my brother and the fact that he doesn't share, so I should bake for them too. My brother in law's favorite cookies are oatmeal raisin, so I made him some, put them in a bag and labeled it "Len's Cookies." Everyone is coming over for dinner tonight so I'll get some heat for that, but they don't know I've made cookies for everyone; a double batch of brownies, oatmeal with dried cherry and chocolate chips and a big pan of sugar cookie bars. There will be enough for everyone to share.<br />

This week I made these blueberry, white chocolate chip oatmeal cookies. Two dozen are in the freezer for my brother and 6 dozen went to the Soup Kitchen. It was a wonderful cookies to use some of my blueberry stash.<br />

Blueberry, White Chocolate, Oatmeal cookies<br />
<br />
1/2 cup butter<br />
1/2 cup shortening<br />
1 1/2 cups brown sugar<br />
1 egg<br />
2 tsp. vanilla extract<br />
1 1/2 cups flour<br />
21 tsp. baking soda<br />
1/4 tsp salt<br />
1/2 tsp. baking powder<br />
2 cups old-fashioned oatmeal<br />
1 cup white chocolate chips<br />
1 1/2 cups frozen blueberries, fresh work but frozen berries don't crush as easily<br />

Preheat oven to 350°F. Line cookie sheets with parchment.<br />
<br />
In a medium bowl, or in a stand mixer, cream the butter, shortening and brown sugar until light and fluffy 3-5 minutes on medium speed. Add egg and vanilla extract, mix until creamy.<br />
<br />
In a small bowl mix flour, baking soda, baking powder and salt. Mixing on low, add flour mixture into creamed mixture until fully combined. Add oatmeal and white chocolate chips and mix. Add blueberries and gently mix them in.<br />
<br />
Scoop 2 Tbsp. (I use a #40 scoop) of cookie dough into balls on prepared cookie sheets. Bake for 12-15 minutes, rotating pans half way through baking. Cool on baking sheets for 5 minutes before removing to cooling racks. Makes about 4 doz.<br />

I'm a little sad today. Today, the Prize Patrol was out, awarding someone with $7,000 a week for life, and it wasn't me. I was really counting on that money so I could retire and move closer to the grandboys. But no, I was not the happy recipient. So, I'll have to continue working, visiting my grandboys when I can and console myself with cake.<br />

This mug cake is a peanut butter lover's dream. I love the combination of chocolate and peanut butter. This makes 2 mug cakes, but Dave doesn't like peanut butter so I guess that means I'll have to eat both of them myself. Not as good as $7,000 a week for life, but it will do!<br />

Peanut Butter and Chocolate Mug Cake<br />
<br />
2 Tbsp. peanut butter, no sugar added<br />
1 Tbsp. butter<br />
1 Tbsp. water<br />
1/4 tsp. vanilla extract<br />
1 Tbsp. Swerve, or sweetener of choice<br />
5-7 drops of stevia, to sweetness desired<br />
1 tsp. baking powder<br />
3 Tbsp. almond flour<br />
1 large egg<br />
1-2 tsp. sugar free chocolate chips<br />

In a microwave safe small bowl, add peanut butter, butter and water. Microwave 30 seconds or until you can mix all the ingredients together and they are melted. Mix well until creamed.<br />
<br />
Stir in sweeteners, baking powder, almond flour and beaten egg. Stir in chocolate chips.<br />
<br />
Transfer to two microwave safe mugs. Microwave each mug, separately, for 60 seconds or until center is cooked.<br />
<br />
Serve with a drizzle of chocolate, whipped cream, or warmed peanut butter...or all three!<br />

I don't know how this happens. I check the zucchini, cut all that are ready and move on. The next day Dave asks why I have a monster zucchini and when am I going to cut it. It wasn't there yesterday, I checked, it must have grown overnight.<br />

Well, last Friday, I checked the zucchini and gave it all to my neighbor. At this point I have 16 2-cup bags of shredded zucchini in my freezer and that is more than I'll use this year for bread and in soups, stews and chili. Monday afternoon, during my break, I went outside and found this:<br />

Yes, I'm over zucchini. I've eaten it grated, fried, pattyed, <a href="http://atasteofalaska.blogspot.com/2014/09/zucchini-fries.html" target="_blank">baked</a>, caked, <a href="http://atasteofalaska.blogspot.com/2014/08/chocolate-zucchini-quick-bread.html" target="_blank">breaded</a>, <a href="http://atasteofalaska.blogspot.com/2018/12/zucchini-chips.html" target="_blank">chipped</a>, stuffed, spiralized and now souped.<br />

This soup is delicious. A nice creamy soup to start a meal or a big bowl for lunch. You can make this up to the point of adding the cream, and freeze it for later. Add the cream and sour cream when you thaw and reheat it. I'm making a quadruple batch for the freezer, I have enough zucchini. I'm going to be happily swimming in zucchini soup for the winter.<br />

Keto Zucchini Soup<br />
1 Tbsp. avocado oil or coconut oil<br />
6 cups chopped zucchini<br />
3 cloves garlic<br />
4 cups chicken broth<br />
salt and pepper to taste<br />
1/2 tsp. dried thyme]<br />
1/2 cup sour cream<br />
1/2 cup heavy cream<br />
<br />
optional toppings:<br />
diced, fried bacon or pancetta<br />
heavy cream, for swirls<br />
parmesan Whisps<br />
extra virgin olive oil<br />

In a medium stock pot, heat avocado oil, add zucchini and cook until softened, about 10 minutes. Add garlic and cook for 1 minute, stirring so it doesn't burn. Add chicken broth and dried thyme, bring to a simmer and cook for 10 minutes.<br />
<br />
Using an immersion blender, blend soup until smooth. Alternatively, you can process in a blender with a steam vent covered by a towel, in two batches. Return to stockpot and season with salt and pepper to taste. Add cream and sour cream and heat through.<br />
<br />
Serve in bowls or cups, using a spoon pour heavy cream in a swirl over the top and sprinkle crisped pancetta over the top, or top with cheese Whisps.<br />

I think I just had my last camping trip for the season. Dave will be in Moose Camp starting next weekend until the end of September, and come October, it may be too cold. It was also the weekend for 4-wheeler accidents. Dave and I went out to get some firewood. Mooree was running with Dave and I was a couple minutes behind. I was about to turn off the trail to where the wood was and Mooree ran right in front of me. I turned and hit a big hole, and the 4-wheeler went over. I pushed off the wheeler, so it wouldn't land on me, and landed hard. Dave had to turn my wheeler over by himself and drive me back to camp. I took some good anti-inflammatory and had a nap, thinking I had messed up my fake hip. Luckily, the meds worked and I limped around the rest of the day but no real damage. I was thanking my lucky stars it wasn't worse. I did have a sore hip the rest of the weekend but Motrin and a couple dirty martinis helped.<br />
<br />
And now that I'm home, chocolate cake helps. I'm trying to keep that leg stretched, but not get it sore and a trip to the microwave to bake this little puppy up is just the medicine I need! Chocolate helps everything.<br />

I'm not a big gardener, I plant just enough to make me feel like a gardener. I have 4 raised beds I use to grow some veggies and I like lots of flowers.<br />

This year I planted 12 cauliflower plants, 6 of broccoli, 6 cabbages, 2 eggplant (for the first time), Swiss chard, lettuce, radishes, 4 green zucchini and 2 yellow squash, 2 cucumber plants and the tomatoes in the greenhouse.<br />
<br />
Now, this year it rained a lot, so watering was pretty easy...I didn't have to do it much, which is a good thing because <a href="http://atasteofalaska.blogspot.com/2019/08/raspberry-lemon-drop-martini-keto-remake.html" target="_blank">my dad isn't here to water for me</a>. But the problem with my garden is that everything is ready at the same time! I put harvesting off as long as possible (you can see in the picture below, one of my cauliflowers started to spread), but I finally had to deal with all that broccoli and cauliflower.<br />
<br />
Freezing broccoli and cauliflower doesn't take a lot of work, just be organized and follow the steps.<br />

Freezing Cauliflower and Broccoli<br />

1) Cut cauliflower (and Broccoli) from garden, bring inside and wash.</div>

2) Place large stock 2/3 full of water on stove and heat to a roiling boil.</div>
<div>

3) While water is heating, cut cauliflower into desired sized florets.</div>
<div>

4) Set up ice bath in sink, cold water and lots of ice (in Fairbanks we can skip the ice, our water comes out of the tap that cold)</div>

5) Place several layers of towels on a table or big counter.</div>
<div>

6) Once water is boiling, generously salt the water (this is optional)</div>
<div>

7) Place about 4-6 cups of florets in the boiling water and set timer for 5 minutes for cauliflower or 3 minutes for broccoli.</div>

8) When the time beeps, remove the florets from the boiling water (I use a big skimmer) and place in the ice bath until all the florets are cold. While one batch of florets are cooling, I start another batch in the boiling water.</div>

9) Once the florets are cold, remove them from the ice bath to a colander to drain.</div>
<div>

10) Once drained, tip them onto the layers of towels to dry further. I use a towel to GENTLY dry the tops, you don't want squished florets.</div>

11) Place dried florets in sheet pans lined with parchment and freeze.</div>

12) Once frozen transfer florets to ziplock bags and return to freezer until needed.<br />

So that is the way I blanched and froze 9 gallon bags of cauliflower and 3 gallon bags of broccoli. The nice thing about freezing the florets this way is the florets don't freeze together and you can take out as much as you want and return the rest of the bag to the freezer.</div>

But 9 gallons of cauliflower is a lot for Dave and me so I need to get a little creative in ways to fix it so Dave doesn't get too tired of it. He loves mac and cheese, so I decided to give the "cauli and cheese" a try. It was a hit! He even ate left-overs for lunch the next day. </div>

Cauliflower and Cheese</div>

1 med. head cauliflower</div>
<div class="separator" style="clear: both; text-align: left;">
1/2 cup heavy whipping cream, or use 1/4 c. cream and 1/4 c. almond milk or water</div>

3 oz. cream cheese</div>

1 tsp. onion powder</div>
<div class="separator" style="clear: both; text-align: left;">
1 tsp. garlic powder</div>

1 cup shredded sharp cheddar cheese</div>

1/2 cup shredded mozzarella cheese</div>

1/2 cup grated parmesan cheese, divided</div>

1/4 cup ground pork rinds, or pork panko</div>

Preheat oven to 350°. Line a baking sheet with parchment paper, spray a baking dish with cooking spray or butter.</div>

Wash the cauliflower and break into small florets. Place on prepared baking sheet and bake for 15 minutes. </div>

Meanwhile, make sauce. In a medium saucepan or a microwave safe bowl, mix whipping cream, cream cheese, onion powder, garlic powder, cheddar, mozzarella and 1/4 cup grated parmesan cheese. Heat until melted and completely mixed and smooth. </div>

Gently mix cauliflower into the cheese sauce and pour into prepared baking dish. </div>

Mix remaining 1/4 cup parmesan and the ground pork rinds and sprinkle over the top of the cauliflower. Bake for 20-30 minutes until golden on top and bubbly. </div>
