Wonder Bread Chaffle


I have been craving a peanut butter and jelly sandwich.  I love peanut butter and now just eat a spoonful or eat it with some bell peppers.  But nothing beats a peanut butter and jelly sandwich.

Then, while we were binging on some Netflix, one of the shows we were watching made a lot of peanut butter and jelly sandwiches.  I know it was just something for the actor to do while they were talking, but because I was craving a PB&J, I noticed it and it just made me want one more.

So, I found this recipe on Pinterest for "Wonder Bread Chaffle" and I decided to try it.  Now I thought these were called chaffles because it was a waffle with cheese?  But this recipe does not include cheese of any kind.  So I guess it is a maffle because it has mayo in it.  Name details aside, it was good and it was perfect for my peanut butter and jelly craving.  Next time I'll try grilled cheese with tomato soup.

My tiny Dash waffle maker is the perfect size for bread!



White Bread Chaffle
1 egg
3 Tbsp. almond flour
1 Tbsp. mayo
1/4 tsp. baking powder
1 tsp. water

Heat waffle iron according to manufacture's instructions.

Mix egg, almond flour, mayo, baking powder and water.  Pour half the mixture into heated waffle iron allow to cook 3-4 minutes.  Repeat with the rest of the batter.

Vacation


Hello friends!  I've been on a little vacation for the last couple of weeks.  We what we called the "West Coast Tour" for a little sun in the middle of our record breaking cold winter.  We started in Arizona with my dad and mom.  We spent two days with them.  My brother and his wife come over and we had a great visit.  We also met some friends from Fairbanks for lunch (they live in Arizona for most of the winter now).

Then we drove to San Diego to see the blond kids.  We had a fun day watching the blond boy play soccer and win their championship, then we went to the beach for a great hike and long walk along the water. I love the ocean there so much, and the ocean smells right.  The next day we went to the Safari Park and fed the giraffe and rhino.  Another great day in the sun.

Then we drove up to the San Francisco area to spend some time with the baby boy and his wife.  One day we sat outside by the pool, played cards and visited.  We laughed and had such a good time.  For dinner we went to a Korean Barbecue place and ate all the meat...an easy keto dinner.
After that, we flew to see the babies.  Gman was a bundle of energy as usual and EZ was so snuggly.  We had to take Gman to preschool so we could get some baby snuggles.  Otherwise he kept saying "Grandma, can you play with me?"  And who can say no to that?

It was a whirlwind, and there were other friends and family we wanted to see but just didn't get to.  They will have to wait for the next trip.  We flew home so we could rest and go back to work!  The dogs were very happy to see us and they are just a little clingy right now!
So, we are back home and back into our regular routine.  Work is crazy busy as this is our event season and my travel season starts in a couple of weeks.

One very nice thing we noticed is that while we are having our coffee in the morning the sun is coming up and we are not driving to work or home in the evening in the dark anymore.  It was still -30 but at least with sun in the morning I feel like spring is really around the corner.

Hope



I got this tea pot years ago just before Christmas.  The Seattle DIL was coming up for Christmas or Thanksgiving, I don't remember, and she drinks tea.  What a cute little teapot, I thought when I saw it.  
Well the DIL saw it and said, "why does it say nope?"

We laughed, had tea and every time I look at it now I think "nope."


Well, February is here and I am working on a more positive outlook than I had in January, so I fixed the teapot and now it clearly says hope.

I hope the rest of the year is easy, happy and healthy for you (and for me).  And I have the teapot to help me keep on track.

Eggnog Affogato


On one hand, January seemed like the longest month ever...I was sick, it was really cold all month and 30 day no drinking (what was I thinking?)  On the other hand, January seemed to fly by and I didn't get most of what I wanted to do done...ummm, procrastinate much?

Well, I FINALLY took down my Christmas cards and the Christmas pictures of Gman and EZ that I had displayed.  And I found the last of the eggnog ice cream I made (which was this eggnog with rum run through my ice cream machine). 
I decided to celebrate the end of the L O N G E S T month of the year with this eggnog affogato, but instead of a shot of hot coffee, I used warmed keto coffee liqueur.
It was a nice little treat to reward myself for finishing something that should have been done 3 or 4 weeks ago.  But, I'm all about rewards.  I think we all need a reward just for staying alive and not losing our minds during that long January.

Eggnog Affogato

1 scoop eggnog ice cream, or vanilla or chocolate
1 shot keto coffee liqueur

In a small bowl or mug, warm coffee liqueur in microwave.  Meanwhile scoop ice cream into cup or pretty glass (if using glass make sure the coffee liqueur is just warm and not hot).  Pour coffee liqueur over ice cream and feel good that January is over and you might survive until spring.
